Norpro 3912 Review by Just Some Guy
I bought 2 of these pans to make some miniature cheesecakes. The 2 pans arrived, one slightly warped, but I wasn't too concerned. The design is actually very nice, but the overall construction leaves something to be desired. The box uses the term "professional", but having purchased quality professional bakeware before, this doesn't really qualify in my book. This is more like basic home bakeware, lightweight material with a poor quality non-stick coating. After only one use, both pans were warped and the non-stick coating was already separating from one of the base inserts. I was very disappointed and I'm in the process of returning them both. Perhaps Norpro could consider a redesign with better quality materials. I'd love to have a better quality version as this type of pan is hard to find.

I bought this thinking it would fit in my toaster oven based on the measurements listed, but at first the handles stuck out far enough to make it too long to fit. After bending the handles up with pliers it slides in easily (luckily, bending the handles up didn't result in any cracking or chipping of the metal surface and hasn't affected the pan's performance in any way). I've used it several times for cheesecakes, cookies and brownies, and they have all turned out great. So far the non-stick coating is performing well and has not chipped or rusted. I use coconut oil to grease the bottoms and sides, and the desserts slide out intact, as advertised. I haven't let it sit in water too long or used anything abrasive on it -- it cleans easily if you wet it for a minute with warm soapy water and scrub with a soft nylon bristle dish brush -- and I always dry it right away. I lost one of the round disks and found that a Ball jelly jar lid works pretty well as a substitute.

I bought this pan and the Norpro mini cheesecake pan. The mini pan works like a dream, but I had more problems with this one. The little discs that act as the bottoms for the pans aren't quite big enough, so my crust actually baked around the disc, causing the disc to stick. In my attempts to remove the disc, I lost all my crust. I was using one of my tried and true recipes, and was very disappointed to have lost my crust. I may try again, but for now I'll stick with the mini pan.
